Lets hope that this is the last time you will be buying shop bread as this is sooo delicious and sooo much better that it should be illegal to bake (see what I did there?)
Ingredients for 1 bread
- 500g of flour
- 7g of dried yeast
- 330 ml of warm water
- 10g of salt
- 1 tablespoon of olive oil
- 1 teaspoon of cia seeds
- 1 teaspoon of sesame seeds
- 1 teaspoon of poppy seeds
1Start off by dissolving your yeast into 100 ml of water from your original 330 and add a bit of flour (from the original ammount) in so that the yeast can wake up and have its breakfast. After around 20 min it should start bubbling nicely and the aroma of fresh yeast should already fill your kitchen.
2After the 20 min has passed and all is good and bubbly then we can move in adding the rest of the 500g of flour and the water and go ahead and mix everything together with the rest of the ingredients (salt and olive oil as well as the optionals if you wish to go for).
3I use a food processor to mix all the ingredients and stretch the dough in preparation for resting and is usually ready to rest when it doesn’t stick to the walls of the bowl anymore. I let it rest for around 1 hour in room temperature or ±21 degrees Celsius.
4After is well rested it should double in size and this is the time when we need to work it out by hand just to kick in the bobbles again. It is also the time when we portion the breads and choose our sizes and shapes (in my case i went for 2 round breads).
5So far so good.. We have reached an important step in our process of making bread. Now we portion our bread we need to let it rest for another half an hour covered with a damp towel. At the same time preheat our oven and cast iron pan to 220 degrees Celsius, in which we will bake our bread. Once the time is reached we can crust our bread and add them to the pans.
5Bake the breads in the pans covered with the lid and make sure once you start baking them spray the breads with water in order to give it an extra crunchy crust. bake them for 45 min with lid and 10 min without the lid or till golden brown. Mine turned out like this:
